Citrus Roasted Carrots

Ingredients:

  • 2-3 Pears (Bartlett, Anjou, or Bose), cored and sliced into halves
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon cinnamon
  • 1/4 cup chopped walnuts or any nuts
  • 2 tablespoons honey or maple syrup
  • Vanilla yogurt or ice cream


Instructions:

  1. Preheat your air fryer to 375°F (190°C).
  2. In a small bowl, mix together the melted coconut oil and cinnamon.
  3. Brush the pear wedges with the coconut oil mixture and place them in the air fryer basket.
  4. Air fry the pears for 8-10 minutes or until they are tender and lightly browned.
  5. Remove the pears from the air fryer and transfer them to a serving plate.
  6. Sprinkle the chopped nuts over the pears and drizzle them with honey or maple syrup.
  7. Serve the air fryer pears with a dollop of vanilla yogurt or a scoop of ice cream, if desired.
