Citrus roasted carrots

Ingredients:

  • ¼ cup olive oil 
  • 1 tbsp grapefruit juice 1 ½ tsp coriander
  • 1 lb carrots, sliced lengthwise 
  • Salt & pepper 
  • 1 tbsp maple syrup *if you like more sweetness*

For the crumble: 

  • ¼ cup roasted almonds 
  • 2 tbsp chopped parsley
  • 1 tsp finely grated grapefruit zest

Instructions: 

  1. Preheat oven to 450 and line a baking sheet with parchment paper
  2. In a bowl, whisk olive oil with grapefruit juice and coriander
  3. Spread carrots evenly on the baking sheet, toss with 3 tbsp of dressing, and season with salt and pepper. 
  4. Place in the oven and roast for 20 minutes.
  5. In a small bowl, combine the almonds, zest, and parsley. 
  6. Remove the carrots from the oven and drizzle with the remaining dressing and top with crumble.
