Feta Beet DIP

Ingredients:

  • 1 package (8 oz) of ready-to-eat beets,  chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste


Instructions:

  1. In a food processor, blend the chopped beets until they are smooth.
  2. Add the crumbled feta cheese, Greek yogurt, olive oil, lemon juice, minced garlic, salt, and pepper to the food processor.
  3. Blend until all ingredients are well combined and the dip is smooth and creamy.
  4. Taste and adjust seasoning if necessary.
  5. Transfer the dip to a serving bowl and garnish with additional feta cheese and chopped fresh herbs if desired.
  6. Serve with pita chips, crackers, or sliced vegetables.
