1 tsp honey (you can use more if you like the sweetness)
Instructions:
In a large bowl, combine the chopped spinach, diced red onion, sliced cucumber, and finely chopped cauliflower florets. Toss to combine.
In a small pan over medium heat, toast the pumpkin seeds for 3-5 minutes or until lightly browned and fragrant. Remove from heat and set aside.
Add the crumbled goat cheese and toasted pumpkin seeds to the bowl with the vegetables.
In a blender or food processor, combine the Greek yogurt, avocado, lemon juice, parsley, chives, and minced garlic. Blend until smooth and creamy. If the dressing is too thick, add water to thin as needed.
Drizzle the dressing over the salad and toss to coat. Serve immediately and enjoy!
