2 large sweet potatoes, washed and sliced into ⅕-inch rounds
1 cup cherry tomatoes, chopped
1/4 cup red onion, chopped
1 small cucumber, diced
1/2 cup crumbled feta cheese
1/2 teaspoon salt
1/2 teaspoon Greek oregano
2 tablespoons olive oil, plus extra for brushing
Store-bought gluten-free hummus
Instructions:
Preheat the oven to 375°F (190°C).
In a large bowl, mix together the sweet potato rounds, cherry tomatoes, red onion, diced cucumber, crumbled feta cheese, salt, Greek oregano, and 2 tablespoons of olive oil until everything is evenly coated.
Place the sweet potato rounds on a baking sheet lined with parchment paper. Brush each sweet potato round with a little bit of olive oil.
Bake the sweet potato rounds for 20-25 minutes, or until they are tender and lightly browned.
Remove the sweet potato rounds from the oven and let them cool for a few minutes.
To assemble the potato bites, place a dollop of gluten-free hummus on each sweet potato round.
Sprinkle the tomato, onion, cucumber, and feta mixture over the hummus.
Serve the potato bites immediately as a snack or appetizer.
