Gluten-free Oreo Brownies

Ingredients: 

  • 2 eggs
  • ½ cup of melted, cooled butter
  • ¾ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 tablespoon pure vanilla extract
  • ¾ cup GF 1:1 Flour 
  • ½ cup cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 10 Gluten-Free Oreo cookies, broken into pieces 


Instructions:

  1. Preheat the oven to 350°F (180°C) and line a 9-inch square baking pan with parchment paper.
  2. Whisk together the melted butter and granulated sugar in a large bowl until well combined.
  3. Add the eggs one at a time, whisking well after each addition.
  4. Add the gluten-free flour, unsweetened cocoa powder, salt, and vanilla extract to the bowl and whisk until the batter is smooth.
  5. Pour the batter into the prepared baking pan and add Oreo pieces over the top of the batter.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the centre of the brownies comes out clean.
  7. Allow the brownies to cool in the pan for 10 minutes before slicing and serving.
