SESAME TAHINI COOKIES

Ingredients:

  • ⅓ cup tahini
  • 1½ cups almond flour
  • Pinch of salt
  • ⅓ cup honey (or maple syrup)
  • 1 tsp vanilla
  • ⅓ cup sesame seeds for rolling


Instructions:

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the tahini, almond flour, salt, honey (or maple syrup), and vanilla. Stir well until a thick dough forms.
  3. Scoop out tablespoon-sized portions of dough and roll them into balls with your hands.
  4. Place the sesame seeds in a shallow dish or plate. Roll each ball in the sesame seeds until coated.
  5. Place the coated balls onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Use the palm of your hand or the back of a spoon gently flatten each ball.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
