1 cup plain Greek yogurt strained or labneh * (the yogurt needs to be thick, not runny)
2-3 tablespoons olive oil
Zest from one lemon
Salt and black pepper, to taste
Instructions:
Start by crumbling the feta cheese and placing it into a food processor.
Add the minced garlic, Greek yogurt, lemon zest, and olive oil to the food processor.
Blend the mixture until it is smooth and creamy, stopping occasionally to scrape down the sides of the food processor.
Once the mixture is smooth and creamy, season it with salt and black pepper to taste. Note that feta cheese can be quite salty, so you may not need to add too much salt.
Transfer the whipped feta to a serving bowl and chill in the refrigerator for at least 30 minutes to allow the flavours to meld together.
When ready to serve, take the whipped feta out of the refrigerator and let it come to room temperature for a few minutes.
Drizzle with additional olive oil and serve with pita chips, crackers, or raw vegetables.
